RAGI CHEELA


The United Nations has declared 2023,as the international year of the millets.Hence,of late,I have seen surge in the millet based recipes on many platforms.People have started adopting this super food in their diet.Ragi cheela,is a healthier version of the authentic besan cheela,prepared in the North India. You can even incorporate any number of veggies in the batter to make it more healthier. 
 
 
 
 






 

INGREDIENTS :


RAGI FLOUR- 1 CUP

GRAM FLOUR- 1/4 CUP

BUTTER MILK OR CURD- 1/2 CUP

WATER AS REQUIRED

SALT AS REQUIRED

GRATED GINGER-  1 TSP

CHOPPED GREEN CHILLIES- 2 NOS

CURRY LEAVES- 2 SPRIGS

CHOPPED CORIANDER LEAVES- 1 TBSP

AJWAIN / CAROM SEEDS- 1 TSP

OIL- FOR ROASTING

 

PROCEDURE :


1. In a wide bowl take ragi flour ,besan flour,salt,butter milk and whisk to a fine batter without lumps. If the batter is thick,dilute it with water.


2. Now add chopped green chillies,grated ginger,carom seeds,curry leaves,chopped coriander leaves to the batter and mix again. The batter should be thin and of flowing consistency. Set the batter aside for twenty minutes.


3. Apply oil on the dosa pan and heat it .


4. When the dosa pan is hot enough, pour the batter. Don't spread it. The same way,you prepare rava dosa.

 

5. When the cheela is cooked,flip it to the other aside and cook.


6. Slide the cheela off the pan and serve with any side dish of your choice.
