PITLAI POWDER

INGREDIENTS TO ROAST AND POWDER

CORIANDER SEEDS- 8 TSP

URAD DHAL- 4 TSP

GRAM DHAL- 3 TSP

PEPPER CORNS- 1 TSP

RED CHILIES- 7 NOS

COCONUT GRATED= 1 TBSP

ASAFOETIDA- 1 TSP

OTHER INGREDIENTS                     

BITTER GOURD- 2 NOS

TOOR DHAL- 1 CUP

TAMARIND- LEMON SIZED

SALT ACCORDING TO TASTE

TURMERIC POWDER= 1/2 TSP


SEASONING

OIL- 1 TBSP
                                                                 

MUSTARD- 1 TSP

CURRY LEAVES- 1 SPRIG

ASAFOETIDA- 1 TSP



PREPARATION

Chop bitter gourd and saute well till the veggie turns black and crisp.Extract tamarind syrup by soaking in warm water.Steam cook toor dhal and keep it aside.Roast all the ingredients in oil till the lentils and other ingredients turn golden brown in colour.Grind all the roasted ingredients to powder in a mixer,and keep it aside.In a pan add 1 tbsp oil and all the ingredients for seasoning and over this add the crisp bitter gourd over this add tamarind syrup salt, turmeric powder and boil till the raw smell of the tamarind syrup goes off now add the steamed toor dhal and the pitlai powder and keep stirring to avoid lumps . Boil pitlai for 3 minutes and switch off.It will serve 5 to 6 people.
