BRINJAL KARAKOZHAMBU



INGREDIENTS TO ROAST AND GRIND TO PASTE

CORIANDER SEEDS- 1 TBSP
                                                                                  

GRAM DHAL- 4 TSP

URAD DHAL-4 TSP

PEPERCORNS- 2 1/2 TSP

CUMIN SEEDS- 1/2 TSP

RED CHILIES- 8 NOS

COCONUT GRATED- 1 1/2

 TSP

ONION MEDIUM SIZED- 1 NO

OIL- 3 TSP
                                                           



OTHER INGREDIENTS

BRINJAL- 3 NOS

ONION - 2 NOS

GARLIC CLOVES- 6 NOS

TAMARIND LEMON SIZED

SALT ACCORDING TO TASTE

OIL= 2 TBSP


SEASONING

OIL- 3 TSP                                                           

MUSTARD- 1 TSP                                          




URAD DHAL- 1 TSP

CURRY LEAVES- 1 SPRIG






PREPARATION

Soak tamarind in warm water and extract syrup.In a pan add 3 tsp oil and all the ingredients to roast till the all the dhals , coriander seeds turn golden brown in colour and onion turns translucent.Allow the ingredients to cool and grind in a mixer using little water to fine paste. In the same pan used for roasting ingredients take 2 tbsp oil add, chopped brinjal,onion,garlic pods salt when cooked pour the tamarind syrup,turmeric powder and boil tamarind syrup till the raw smell goes off.Add the paste over the tamarind syrup and stir well to avoid lumps and also add water to adjust the consistency of the kozhambu and boil for 3 minutes,at last add the seasoning to the kozhambu.
