VEGETABLE PARUPU KOOTU





INGREDIENTS TO ROAST AND GRIND TO POWDER

Roast all the ingredients in2 tsp of oil and grind to coarse powder.

URAD DHAL-  5 TSP

GRAM DHAL- 4 TSP

PEPPER CORNS- 1 TSP

CURRY LEAVES- 1 SPRIG

COCONUT GRATED- 1 1/2 TBSP

ASAFOETIDA- 1 TSP

RED CHILIES- 6 NOS

OTHER INGREDIENTS

STEAMED TOOR DHAL- 1 1/2 CUPS

ANY VEGGIE- ASH GOURD/BRINJAL/YAM/COWPEABEANS

TAMARIND-MEDIUM LEMON SIZED

TURMERIC POWDER- 1/2 TSP

OIL- 2 TBSP.

SALT ACCORDING TO TASTE

SEASONING

OIL- 3 TSP

MUSTARD-1 TSP

CURRY LEAVES- 1 SPRIG

GROUNDNUTS-1 TBSP

PREPARATION

Extract tamarind syrup by soaking tamarind in warm water.In a pan heat 2 tbsp oil and add veggies,i used brinjal and cowpebeans and saute well till the veggies turns soft.over the veggie add tamarind syrup,turmeric powder and boil till the raw smell of the tamarind syrup goes off.Then add steamed toor dhal and cook for while at last add the ground powder and keep stirring to avoid lumps.At last add the seasoning to the kootu.
