LADY'S FINGER (BHENDEKAYE) GOJJU KARNATAKA STYLE


GOJJU IS A SPICY,TANGY SOUTH INDIAN GRAVY PREPARED BY BLENDING ALL
 THE INGREDIENTS.ANY VEGGIES CAN BE ADDED TO MAKE GOJJU.


INGREDIENTS TO ROAST AND GRIND

                                                                         
URAD DHAL- 5 TSP

GRAM DHAL- 3 TSP

ASAFOETIDA- 1 TSP

FENUGREEK SEEDS-1/2 TSP

CUMIN SEEDS- 1/4 TSP

WHITE SESAME SEEDS- 3 TSP 

RED CHILIES- 7-8 NOS

CURRY LEAVES- 1 SPRIG

OIL- 3 TSP    

In a pan add 3 tsp oil and all the ingredients to roast.Roast all the ingredients till the dhal change to golden colour.Now grind all the ingredients to paste and keep it aside.Extract tamarind syrup and keep it aside.

VEGGIES REQUIRED & OTHER INGREDIENTS

LADY'S FINGER- 8 NOS

GREEN CHILIES- 2 NOS

JAGGERY- 1 TSP

TAMARIND- LEMON SIZED

TURMERIC POWDER- 1/2 TSP

SALT ACCORDING TO TASTE

SEASONING

MUSTARD- 1 TSP

CURRY LEAVES- 1 SPRIG

OIL- 3 TSP 
 
 


 





    
 

PREPARATION

 In a pan add 2 tbsp oil and add slit lady's finger,slit green chilies saute till the lady's finger turn crisp.Over the veggie add tamarind syrup , salt,turmeric powder,jaggery and allow to boil till the raw smell of the tamarind syrup disappears.Now add the paste allow it to boil for few minutes.Add the seasoning and switch off.
