VEGETABLE POHA






INGREDIENTS

POHA( FLATTENED RICE)-  2 CUPS

ONION - 2 NOS

CAPSICUM 1                        

POTATO- 1

MUSTARD SEEDS- 1TSP

CUMIN SEEDS-  1 1/2 TSP 

                   

RED CHILIES   2 NOS

GINGER GRATED -1/2  TSP

SALT ACCORDING TO TASTE


CURRY LEAVES -  1 SPRIG

CILANTRO


ASAFOETIDA- 1/2  TSP

COCONUT GRATED 1 TBSP

GREEN CHILIES  3-4 NOS



ROASTED PEANUTS 1 TBSP 

 OIL 2 TBSP

GHEE  4  TSP

 













PREPARATION

 

Rinse poha and remove the impurities.Soak 2 cups of poha in 1 1/2 cups of water for 20 minutes then drain poha keep it aside. 



In pan heat oil,add ghee then add mustard  when it splutters add cumin seeds, chopped onion, grated ginger,green chilies,Red chilies  salt, asafoetida, curry leaves saute well add boiled chopped potato, chopped capsicum over this add soaked poha and grated coconut and saute for few seconds at last garnish with cilantro and serve.
