PALAK AND FENUGREEK LEAVES SAMBAR
INGREDIENTS FOR SAMBAR POWDER
CORIANDER SEEDS-- 1 TBSP
RED CHILIES- 4 NOS
FENUGREEK SEEDS- 1/4 TSP
INGREDIENTS
PALAK LEAVES- 1 BUNCH
FENUGREEK LEAVES- 1 SMALL BUNCH
TOMATO - 2 NOS
ONION- 2 N0S
GREEN CHILLIES- 2 NOS
CURRY LEAVES
TAMARIND - GOOSE BERRY SIZED
TOOR DHAL- 1 CUP
OIL- 2 TBSP.
SEASONING
MUSTARD - 1 TSP
CUMIN SEEDS- 1 TSP
RED CHILLIES- 2 NOS
FENUGREEK SEEDS- 1 TSP
ASAFOETIDA
CURRY LEAVES.
PREPARATION
Roast all the ingredients in 2 tsp of oil and allow it to cool and powder to a little coarse powder and keep it aside.Soak tamarind in hot water and prepare extract.
Steam cook toor dhal and mash it well and keep it aside.In a pan add 2 tbsp oil then add chopped onions, add salt when it turns translucent add green chilies ,tomatoes saute for a while add roughly chopped palak leaves, chopped fenugreek leaves saute well.Over sauteed green add tamarind syrup boil till the raw smell of tamarind syrup disappears then add steamed toor dhal, turmeric powder at last add the powdered sambar powder heat for few minutes.Add the seasoning to the palak sambar.
