Idli becomes hard due to many factors:
Excess
amount of urad dal will not make idli hard on the other hand idlis will
become very flat. If the proportion of rice is high it will impart hard
texture.
While
grinding idli batter,always grind soaked rice first then grind the
soaked urad dal.Because when you grind urad dal first,it will turn watery. Always soak fenugreek seeds along with rice.
Mix
the batter in right consistency. Because if the batter is too
thick,then the idli will be hard. If the batter is watery,then idli will
be flat and stick to the idli plates.
Fermentation
of batter is also very important in determining the texture. Mix salt
to the batter using hands. Leave the batter to ferment overnight for
better results.
Quality
of urad dal is very vital for getting soft idlis. While grinding urad
dal if it becomes fluffy then it is of good quality.
In case your idlis turn hard,you can try these methods.
Take a cup of cooked rice and grind it using little water and mix this paste to the batter and prepare idlis.
Grind soaked poha and add it to the idli batter.
Add a teaspoon of cooking soda to the batter. But cooking soda is not good for heath and can cause stomach related issues.
