VENDEKKAI KARARKOZHAMBU (Lady's Finger Karakozhambu)



INGREDIENTS TO GRIND

COCONUT GRATED- 2 1/2 TBSP

FENNEL SEEDS- 2 TSP

SEASONING

SESAME OIL- 2 TBSP

MUSTARD- 1 TSP

FENUGREEK SEEDS- 1 TSP

CURRY LEAVES-1 SPRIG

OTHER INGREDIENTS

LADY'S FINGER- 8 NOS

ONION- 2 NOS

TOMAT0-2 NOS

GARLIC CLOVES-6 NOS

CHILI POWDER-1 TSP

CORIANDER POWDER- 3 TSP                                 

SAMBAR POWDER- 6 TSP

TAMARIND-LEMON SIZED

SALT ACCORDING TO TASTE

PREPARATION

Soak tamarind in hot water and extract tamarind syrup.Grind coconut and fennel seeds together using little water and keep it aside.In a pan heat oil add mustard when it stars to crackle add fenugreek seeds curry leaves and transfer the seasoned ingredients to the vessel in which kozhambu is stored.In the same pan add remaining oil  when hot add sliced onion,diced lady;s finger when the veggies turn soft add tomato and saute till tomatoes turn mushy then add all the spice powders and saute till nice aroma emanates over this pour tamarind syrup and boil well till raw smell of the tamarind goes off.At last add the coconut paste and boil for 2 minutes don't boil too longer after adding coconut paste.
