VATHAL KOZHAMBU

INGREDIENTS TO PREPARE VATHAL KOZHAMBU POWDER

DHANIYA SEEDS- 75 Grams

RED CHILIES- 75 Grams

TOOR DHAL- 1 TBSP

GRAM DHAL- 1 TBSP

URAD DHAL- 5 TSP

PEPPER- 3/4 TBSP

CUMIN SEEDS- 1 TSP

FENUGREEK SEEDS- 1 TSP

ASAFOETIDA- 1 1/2 TSP

SALT ACCORDING TO TASTE.

SEASONING

SESAME OIL- 1 1/2 TBSP

CURRY LEAVES- 2 SPRIGS

GRAM DHAL- 1 TSP

METHI SEEDS- 1 TSP

MUSTARD SEEDS-1 TSP


ASAFOETIDA- 1/2 TSP

CUMIN SEEDS- 1 TSP

VATHAL- 1 TBSP.

OTHER INGREDIENTS

TAMARIND- LEMON SIZED

ONION- 2 NOS

RICE FLOUR- 2 TSP

TURMERIC POWDER- 1/2 TSP




PREPARATION

In a pan add all the ingredient required for vathal kozhambu powder  and dry roast all the ingredients carefully till nice aroma emanates and powder in a mixer.In a pan add sesame oil and all the ingredients cited under seasoning column.Transfer the seasoned ingredients to the vessel in which kozhambu is stored.Extract tamarind syrup and keep it aside.In the same pan add 2 tbsp oil  and add chopped saute onion till translucent now add 8 tsp of vathal kozhambu powder and saute for a minute along with onion.Now pour the tamarind syrup over the sauteed powder add salt and boil till the raw smell of the tamarind syrup goes off. Now add turmeric powder. For thickening add 3 tsp of rice flour mixed with water and add to the kozhambu and cook for three minutes and switch off.Transfer the kozhambu to the vessel in which the seasoning is added and mix well. the It will serve 5 to 6 people.
