Rava Kesari,an
ubiquitous and very delicious sweet in South India. Its very easy to
prepare and doesn’t require much time. Its prepared by combining
semolina,ghee and sugar.Here is the recipe.
Ingredients
Semolina-1
cup, Water- 2 cups, Sugar-1 1/2 cups, Ghee- 3 tbsp, Cardamom-1/4
tsp,Cashews- 7–8 nos, Raisins- 8 nos, Orange or yellow food color- a
pinch.
Procedure-
In a pan add 2 tsp of ghee and roast cashews and raisins and keep it
aside. In the same pan add semolina and roast in mild heat and switch
off. Heat water till you can see the bubbles. Add the boiling water to
the roasted semolina and keep stirring till the contents form a semi
solid mass. Now switch off the stove.
At
this stage add sugar over the cooked semolina . You can notice small
lump formation after adding sugar.This is normal phenomenon, as lumps
are formed due to crystallization of sugar. Keep stirring in mild heat
till the lumps dissolve completely. At this stage add ghee, roasted
cashews,raisins and cardamom powder and mix well in mild heat.You can
now see contents have blend well forming a semi solid consistency. Now
switch off the stove.
