RAJMA GRAVY




INGREDIENTS
                                                          
RAJMA STEAMED- 2 CUP



TOMATO SLICED- 2 NOS



ONION SLICED-2 NOS



GARLIC CLOVES- 5
NOS.


GINGER PIECE- 1/2 inch


ROASTED CUMIN POWDER-1/2 TSP



CHILLI POWDER- 2 TSP

   

PROCEDURE- In a mixer add sauteed  tomatoes,onions,ginger and garlic and blend to fine paste and keep it aside. In another pan heat oil add bay leaves,add ground paste and saute well. Add chilli powder,salt cumin powder and simmer in mild heat till the raw smell goes off. Add steamed rajma to the gravy and mix well. Garnish with chopped cilantro and serve.


















 

RAVA KESARI


 Rava Kesari,an ubiquitous and very delicious sweet in South India. Its very easy to prepare and doesn’t require much time. Its prepared by combining semolina,ghee and sugar.Here is the recipe.








Ingredients
 
 
 
 
Semolina-1 cup, Water- 2 cups, Sugar-1 1/2 cups, Ghee- 3 tbsp, Cardamom-1/4 tsp,Cashews- 7–8 nos, Raisins- 8 nos, Orange or yellow food color- a pinch.
 
 
 

Procedure- In a pan add 2 tsp of ghee and roast cashews and raisins and keep it aside. In the same pan add semolina and roast in mild heat and switch off. Heat water till you can see the bubbles. Add the boiling water to the roasted semolina and keep stirring till the contents form a semi solid mass. Now switch off the stove.
 
 

At this stage add sugar over the cooked semolina . You can notice small lump formation after adding sugar.This is normal phenomenon, as lumps are formed due to crystallization of sugar. Keep stirring in mild heat till the lumps dissolve completely. At this stage add ghee, roasted cashews,raisins and cardamom powder and mix well in mild heat.You can now see contents have blend well forming a semi solid consistency. Now switch off the stove.
 
 
 
 
 
Keep it covered for 30 minutes. You can notice the consistency of the sweet has changed from semi solid to solid consistency. Now the dish is ready to serve.

DAL FRY


Dal fry is a simple and tasty dish and can be easily prepared. Its less time consuming dish and goes well with chapati and plain rice.

INGREDIENTS

TOOR DAL- 2 CUPS

MOONG DAL- 1/4 CUP

ASAFOETIDA- 1 TSP

GINGER - 1 INCH

TOMATO SLICED-2 NOS

GARLIC MINCED-6 NOS

GREEN CILLIES- 2 NOS

TURMERIC POWDER-3/4 TSP

SALT TO TASTE

FOR SEASONING

GHEE- 4 TSP

CUMIN SEEDS- 2 TSP

RED CHILLI POWDER- 2 TSP

PROCEDURE- In a pressure cooker add the lentils,crushed ginger,turmeric powder,asafoetida,salt and water and 2tsp of ghee and pressure cook for 3-4 whistles till the lentils turn mushy. In a pan add 4 tsp of ghee when it is hot add cumin seeds,when it splutters add chopped tomatoes,minced garlic and saute till tomatoes turn mushy.Over this transfer the contents from pressure cooker and simmer in mild heat. Add crushed kasoori methi and mix well and switch off.

Prepare seasoning by heating ghee in a pan add cumin seeds,add chili powder and switch off.Take care not to burn the chilli powder. Add the seasoning to dal and mix well.
