I always think of one dish with leftover cooked rice : sun-dried
fryums. But this time,I decided to try out a new dish. I prepared
spongy, fluffy dosas with left over rice. The texture of this dosa is
akin to bun dosa. If you fancy soft dosa,then you definitely need to try
this recipe! If you store left over rice in refrigerator, then keep it
at room temperature and soak it in water for an hour prior, to grinding
it.
INGREDIENTS
LEFT OVER COOKED RAW RICE- 2 CUPS
FLATTENED RICE- 1/4 CUP
RICE FLOUR- 2 TBSP
SALT TO TASTE.
PROCEDURE :
1. In a mixer jar take cooked rice,water and grind to thick paste and keep it aside.
2. Soak flattened rice in water for twenty minutes. When it softens,grind it in a mixer grind to smooth paste.
3.In a wide bowl,transfer rice paste,flattened rice paste,salt,rice flour and whisk it to a smooth mixture.
4. Add water to the batter, if it is too thick in consistency. Check if it of dosa batter consistency.
5. Brush some oil on dosa tawa and heat it. When it is hot enough, spread the batter on it. The spread batter should be thick,else you won't get the spongy texture.
6. Drizzle oil on the sides and surface of the spread batter and cook.
7. Slide the cooked dosas and serve with any accompaniment of your choice.
